Lime and Basil Beef Kebabs

Alex is an excellent chef when it comes to concocting different healthy recipes. He has introduced me to many healthy snacks that include sweet potatoes, avocados, red/yellow peppers, and probably many more things that I just don't know what they are called because Alex does makes the majority of our meals. I love grilling out, so we are pretty much the perfect chef/food critic combination.

On Saturday, "we" (aka mostly, Alex...I don't want to sell myself too short because I was active on cleaning and creating the kebabs!) made Mark's Daily Apple- Lime & Basil Kebabs

Combination of yellow/red peppers, chicken, steak, and onion.
 Since we went to Mass on Saturday night, the chicken and steak were given a good amount of time to marinate while we praised the Lord.

As the ingredients show on the website, we used the following to marinate the meats:
  • 1/4 cup fresh lime juice
  • 2 tablespoons coconut oil
  • 1 teaspoon grated orange peel (zest)
  • 2 garlic cloves, peeled
  • 1 handful of basil leaves
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

After grilling these kebabs...perfection. We ate these too quickly, but they were sooo good!
